Super Sardine and Spinach Curry

Sardine & Spinach Super Quick Super Healthy Curry

This is such a Super quick, Super easy, Super tasty, Super healthy and Reasonably cheap too!

Thats enough Supers in once sentence!

Another One of my Go-to’s if I don’t have much time but want something tasty, healthy and protein packed!

Ingredients

  • 2 x Tins of Sardines in tomato sauce
  • ½ tin of good quality chopped tomatoes, I used Mutti (or you can whizz up a couple of plum tomatoes, whatever you have available
  • 2-3 cloves of garlic, small knob of ginger, 2-3 green Chillies – Whizzed together into a paste, I used my manual old skool hand chopper for this one
  • Handful Fresh chopped Coriander
  • 1x tsp Tamarind concentrate/paste
  • A large bunch of Fresh spinach (try and get fresh Spinach not the stuff in a pastic bag from the supermarket, its just as cheap and tastes so much better!)

Spices

  • Sprinkle of the following:
    • Garam Masala (we use Maniben’s Family Garam Masala)
    • Grd Coriander/Cumin
    • Turmeric
    • Red Chilli powder
    • Salt to taste

 Instructions

  1. Heat oil in a large sauce pan and add your Chilli, Garlic, Ginger paste and cook for 2-3 mins
  2. Add in your tomatoes (either tinned or fresh) and the tomato sauce from your tinned sardines, don’t want to lose that flavour…and waste anything
  3. Add in all your spices (except your Garam masala ) & tamarind paste and cook for approx. 10 mins until reduced
  4. Add in your sardines (keep whole as they will break up in the pan even more when you mix in the spinach). Cook for a couple of mins and at this stage you can add ½ cup water to make it more saucy (totally up to you how would like your curry) then add your chopped up spinach. Don’t worry if it looks like a lot of spinach it will wilt down.
  5. Once the Spinach is wilted and cooked after 5-10mins, add your Garam masala.

Mix it through, garnish with your freshly chopped coriander and a squeeze of lemon and serve.

It goes great with some wholegrain basmati rice and a hot buttered Naan.

I also love it as a topping to Sweet jacket Potato to, if I’m being really healthy!!
