Masala Pad Krapow Udon
My Indian-style twist on the famous Thai Pad Kra Pao (Krapow) – packed with spice, savoury mince, and fat, slurpy udon noodles straight into the wok for max flavour and zero faff. 🍜💥
Topped with a crispy fried egg – to finish it off!
👨🏽🍳 Here’s how to make it (serves 2):
Ingredients
- 250g mince (beef, lamb – up to you)
- 2 packs @amoy_uk straight-to-wok udon noodles
- 1 tbsp oil (veg or coconut)
- 1 tsp / good pinch black mustard seeds
- 10–12 fresh curry leaves (instead of Thai basil)
- 1 small onion, sliced/diced
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 green chilli, sliced (optional)
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tsp rice vinegar or lime juice
- 1 tsp honey or brown sugar
- ½ tsp black pepper
Spice Magic Combo:
- 1 tsp garam masala
- ½ tsp Kashmiri chilli or smoked paprika
- ½ tsp cumin powder
- ½ tsp coriander powder
- ¼ tsp turmeric
How To:
1️⃣ Heat oil, pop mustard seeds, crisp up those curry leaves.
2️⃣ Add onions, garlic, ginger & chilli – stir till fragrant.
3️⃣ Add mince, brown it off nicely.
4️⃣ Stir in the spice blend – let it cook through.
5️⃣ Add sauces, vinegar, honey & black pepper – mix it up.
6️⃣ Toss in those Fat udon noodles – straight from the packet!
Coat them in all that saucy, spiced goodness.
🍳 Top with a crispy fried egg for full effect!
