Stuffed Spiced Up Giant Crumpets 

Found some Giant Crumpets (didn’t even know there was such a thing!) and they were on offer in my local super market. So had stuff them!

Stuffed Spiced Up Giant Crumpets, cheesy, spicy with a runny egg pouring out – whats not too like?

Great brunch or brekkie, quick, easy and so tasty and you can fill them with whatever you have or just copy what I did to get you going.

 Ingredients

  • Crumpets (or could use muffins)
  • 2 Eggs
  • ½ small red onion – diced
  • 1 small tomato diced
  • ½ – 1 red Chilli chopped
  • Large Handful of grated cheese
  • Small handful of Coriander washed and chopped for garnish
  • 1 spring onion sliced for Garnish
  • ½ Tsp of Garam Masala
  • Good Pinch of salt & Pepper

Instructions

  1. Cut out the middle of your crumpets, making sure to leave a base at the bottom and not cut all the way through
  2. With the crumpets bits you have cut out – chop up and place into a bowl.
  3. Chop & dice your onion, tomato, red chilli, coriander and grate your cheese and add into the bowl with the chopped up crumpet bits add a good pinch of Garam masala and give it a good mix up!
  4. Break your egg into a small bowl
  5. Place your carved out crumpet into your air fryer basket and drop in your cracked egg into the middle of the crumpet. Pinch of salt and pepper onto your egg (Tip: oil the base of your air fryer so the crumpet base doesn’t stick and if layering with foil do the same!
  6. Top with your cheesey, onion, tomoato, chilli mixture generously. Add some extra grated cheese on top if you like it really cheesey!
  7. Into the Airfryer on 180 degress for 8 mins if you like your egg runny (add an extra min if you don’t). If using an oven – 200 degrees for approx. 8-9mins.
  8. Garnish with chopped coriander and spring onion – ENJOY  – May the Spice be with you!
