Sticky Ginger Garlic Spiced Up Chicken
A great quick & easy, super tasty, sticky, ginger, garlicky, chilli chicken recipe with my spiced up twist
The Ghee and turmeric really add a great twist to this recipe. Also the pickled pink onions add some tanginess to give balance against the sticky sweet chilli sauce too.
Ingredients
- 4 chicken thigh fillets (fat removed, flattened and cut into half)
- 3 Tblsps of Cornflour
- Salt & Pepper
- 1 Tsp Garam masala
- 1 Tsp Chilli Powder
- 2 Tblsps of Cooking Oil
For the Sticky Ginger, Garlic Sauce
- 1 Tblsp of Ghee
- 2 Tblsps of Sweet Chill Sauce
- 2 Tbsps of Mirin
- 2 Tblsps of Light Soya Sauce
- Large Knob of Ginger finely chopped
- 3-4 cloves of Garlic finely chopped
- ½ Tsp Tumeric powder
- ½ Tsp of MSG (Optional)
How to…
- Trim & remove any fat from your Chicken thigh and flatten a little under some cling film with a rolling pin, then cut in half
- Sprinkle with Salt & Pepper, Garam Masala and chill powder. Then cover with the corn flour and pat into the Chicken
- Heat your oil in a frying pan and cook your spiced and floured thigh fillets for approx. 5 mins on each side until cooked through and crispy on the outside. Set aside on some kitchen paper to drain.
- In the same pan make your Sticky sauce. Add in your Ghee, Tumeric, then your Garlic, Ginger, Sweet Chilli Sauce, Mirin and Soya Sauce.
Mix well and heat on medium heat for 1-2 mins and then add in your chicken back in. Cover it all over with sticky sauce for a 1-2mins
Serve, with rice and steamed veg of your choice (Broccoli or Pak Choi goes well), I love it with my pickled pink onions on the side too.
