Spiced Up Loaded Arayes

Arayes Lebanese street food of Pita breads stuffed with spiced up lamb mince and then pan fried and finished by roasting off in the oven so the Pita breads become crispy.

Traditionally a lot thinner then my LOADED version.

I went BIG as I was starving when I cooked these

You can easily make these smaller and thinner and will then cook quicker too.

I pan roasted them in butter or you could use ghee before finishing them off in the oven.

These are so simple, quick and tasty! Get Spiced Up and give them a go!

Ingredients

  • Approx 500g of Lamb
  • Whole onion – grated and all the juice squeezed out
  • Large handful of freshly chopped Coriander
  • Garlic, Ginger, Green Chilli paste
  • Pita Breads of your choice
  • Large knob of butter

Spices a good sprinkling of the Following into your Lamb mince

  • Turmeric
  • Ground Cumin
  • Maniben’s Family Garam Masala
  • Salt & Pepper
  • Ground Fennel Seeds
  • Smoked paprika

 For the Yoghurt, Coriander, Mint Sauce

  • 2-3 Tablespoons of Thick Yoghurt
  • 2-3 Cloves of Garlic
  • 1-2 green chillis
  • Large handful of chopped coriander
  • Large handful of chopped Mint
  • Salt & Pepper to taste
  • Teaspoon of Grd Cumin
  • Glug Olive Oil
  • Squeeze of half a lemon

 Other Stuff

  • Large Frying Pan

 Instructions

  • To make your Loaded Arayes mix everything into your mince, (except the butter) and make sure to squeeze all the water out of your grated onion!
  • Open up your Pita breads and stuff them with your spiced up mince mixture. I went BIG with two large Pita breads stuffed to the brim! You could make smaller thinner ones if you like and then they will cook quicker too!
  • Heat a large frying pan with a large knob of butter and then place meat side down first and pan fry for a couple of mins until the top of the meat has browned.
  • Then flip onto one of the Pita sides  for a couple of mins on each side. They will start to brown. Brush / Coat with some more butter on each side of the Pita and then put in the oven at 180 degrees for approx. 15mins
  • While in the oven make you Coriander, Minty Yoghurt Dip. By mixing the above ingredients together, either in a blender or by hand (for a thicker more rustic style dip)
