Spiced Up Butternut Squash Soup

Winter Series Episode 5 – Proper Comfort Food

Spiced Up Butternut Squash Soup – Perfect warming soup for a winters day…

So easy and so tasty!

Get Spiced Up and give it a go!

What you need…

  • 1 x Butternut Squash
  • 2 leeks
  • 2-3 Celery
  • 1 medium sized onion
  • Knob of Ginger
  • 6-8 Garlic Cloves
  • Tin of Coconut Milk (Good Quality)
  • Tablespoon Ghee
  • Tablespoon of Veg Cooking oil
  • 1 Litre of Stock of your choice (I had some homemade Chicken stock that I used for this)

Spices

  • Salt & Pepper to your taste
  • Dash of Red Wine Vinegar
  • 1 tsp Grd Cinnamon
  • 1 tsp of Red Chill Powder
  • 1 tsp Smoked Paprika
  • 2 tsps of Grd Cumin
  • 1 Tsp Grd Coriander
  • 1 Tsp Tumeric Powder
  • 1 Tsp Garam Masala

How to…

  1. Start with a little fight with your Butternut Squash to cut it in half, scoop out the seeds and score the inside
  2. Sprinkle with Salt & pepper, drizzle with Olive oil and throw into the middle where you scooped out the seeds a couple of garlic cloves.
  3. Into the Air fryer for 30 -35 mins on ROAST at 180 degrees or into an Oven (your choice)
  4. Roughly Chop all your other Veg, Ginger and Garlic
  5. In a large saucepan heat your Ghee and Veg oil and add in your chopped Ginger & Garlic to soften for approx 5 mins
  6. Throw in your chopped Veg – Cook for approx 15 mins until all softened
  7. Add in your Stock, Red wine vinegar and ALL your spices, bring to the boil and simmer for 10-15mins

(Keep tasting it in case you want to change the balance of flavours to your taste)

8.Once your Butternut Squash is roasted – Scoop out into a bowl with the garlic and mash with the back of a spoon

9. Add into your Spicy Soupy mixture. Good stir and add in your Coconut milk

10.Simmer for 5 mins and then Whizz it all I used my trusty Ninja Nutri Bullet. Give it another taste in case anything is missing.

Garnish with a drizzle of Olive oil and Coriander – Serve with Crusty Bread of your choice
