Spiced Up Sausage & Egg Breakfast Muffins
Another quick, easy, tasty, recipe great for breakfast or Brunch
You can freestyle this with whatever you have in the cupboards and fridge too.

The below mixture made 6 large deep filled muffins
Ingredients
- 6 x Sausages ( I used Chipolatas in my recipe) cut into small’ish slices
- Handful of Fresh chopped Coriander
- 2 slices of white bread – toasted and cut into small cubes
- 6 eggs
- Grated Cheese (Optional – I put some on the top of 3 of my muffins)
Spices
- Sprinkle of the following:
- Garam Masala (we use Maniben’s Family Garam Masala)
- Grd Coriander/Cumin
- Turmeric
- Red Chilli powder
- Salt & black pepper (to taste)
Other Stuff
- Large deep 6 x Muffin Tray
- Grease proof Paper
Instructions
- Cook your sausages and slice into small pieces
- Toast your bread and cut into small cubes
- Add the above into a large mixing bowl and crack 6 eggs into it. Add all your spices and chopped coriander and mix thoroughly.
- Cut your grease proof paper into large squares and push down into each section in your muffin tray with the back of a glass.
- Ladle your mixture into each round section to make 6 large breakfast muffins
- Into a heated oven for 15-20 mins at 180 – 190 degrees. Once the muffins are firm inside they are cooked (you can check with a small knife.
- Serve with any sauce you like. These go great with Tamarind sauce and ketchup for me!
