Spiced Up Aubergine Smash Pasta
This is such a quick, easy, tasty, recipe Spiced Up Aubergine Smash Pasta
You can freestyle this with whatever you have in the cupboards and fridge too, to add into Aubergine
Have fun with your flavours and Enjoy getting Spiced Up!
Ingredients
- 2 x large Aubergines
- 3-6 Cloves of garlic (depends how Garlicy you like it!)
- A good handful of baby plum tomatoes (any small tomatoes)
- Good Handful of Fresh Coriander
- 1 Large Red Chilli (The big ones tend not to be too fiery)
- 3-4 Chunks of Parmesan (and some more for grating on top of your pasta)
- Handful of Pine Nuts (Roasted for 1-2 mins in a dry pan)
- Drizzle of Olive Oil
Spices
- Sprinkle of the following
- Garam Masala (we use Maniben’s Family Garam Masala)
- Grd Coriander/Cumin
- Turmeric
- Red Chilli powder (Optional)
- Salt & black pepper (to taste)
Instructions
- Roast your Aubergines, Garlic, Red Chill in the oven for 30- 40 mins @200 degress. Prick them with a fork first and drizzle with some Oil. Half way throw in your baby plum tomatoes.
- Make Sure your Aubergines are soft slice in half and scoop out all the flesh into your blender, squeeze out the garlic from their skins into the blender, chop your roasted chilli throw in too, followed by your chunks of parmesan, toasted pine nuts and all your spices. Blend until a smooth paste
- Time it so your Pasta is boiled at approx. the same time
- Mix through with your pasta and serve with some more grated parmesan and chopped coriander and a drizzle of Olive Oil
