Simple Breakfast Masala Muffins

Ingredients

 Spiced Up Patty

  • Approx 100-150g of either Lamb, chicken, beef or pork mince (your choice)
  • ½ whisked egg
  • ¼teaspoon of Maniben’s Family Garam Masala
  • 1/2 teaspoons of ground coriander & cumin powder
  • 1/4 teaspoon of chilli powder
  • 1/4 teaspoon of turmeric powder
  • Sprinkle of garlic powder or crushed fresh garlic
  • Good pinch of Salt & Pepper

 Spiced Up Hash Browns

  • 2 Medium Potatoes Peeled and coarsely grated ( I usually go for Maris Piper or King Edwards)
  • ½ Beaten Egg
  • A good couple of pinches of Salt & Pepper
  • 1 teaspoon of ground Cumin

 SpicedUp Omlette

  • 2 Eggs – whisked
  • ¼ teaspoon of Manibens Family Garam Masala
  • ¼ teaspoon of red chilli powder
  • Good pinch of Salt & Pepper

Method

Meat Patty

  1. Mix up your chosen minced meat with all the ingredients above including the spices and split into 2 balls roll out and flatten into thin round patty shapes
  2. Then cover with cling film and put in fridge  While you make the other fillings for your Masala Muffin (If you can make the night before even better, ready for your breakfast the next morning)

Hash Browns

  1. Coarsely grate the potatoes and place into a tea towel or muslin cloth to then squeeze out the excess liquid by twisting the towel cloth. Place the mixture in a large bowl.
  2. Add the egg, a good couple of pinches of salt and freshly ground black pepper (you need to salt the mixture well otherwise the hash browns can be quite bland) add the cumin. Mix the ingredients really well.
  3. Make into 3-4 round and flatten shapes, ready to shallow fry.

 Spiced Up Omlette

  1. Crack open and whisk up your two Eggs and add all the spices and salt & pepper and give another good whisk. Set aside while you cook your Meat patty and hash browns

Cooking Up all your Masala Breakfast Muffin Component Parts

  1. Heat a good glug of oil in a frying pan and when the oil is hot (but not smoking), add the hash brown / potato mixture into the pan and flatten into patties. Flip over once browned and crispy – about 3–4 minutes each side. Keep checking they don’t over burn but want them nice and crispy.
  2. At the same time get a griddle plan or another frying pan hot and cook the meat patties, depending on what meat you are using and should take 3-5 mins each side max. Keep turning. Once cooked set aside on a dry kitchen tissue to drain any excess oil.
  3. In the same pan add your muffins that are sliced in half and toast them, these will absorb all the juices from your meat patties while toasting. Alternatively, you can put them in the toaster and toast.
  4. Once your Meat patties are done cook your already whisked up omlette.

Time to build your Simple Breakfast Masala Muffins

  • Once your Meat patties, Hash browns and Omlette are ready you can build it up.
  • I usually start with omelette and use the Muffin base as a template and cut the omelette around it in a circle.
  • Then add the Spiced Up meat patty, followed by the one of your Hash browns.
  • Top with a good smattering of sauce of your choice.
  • You could add another layer of Spiced up Omlette, had brown or even a slice of melted cheese.
  • Go freestyle, however you want to stack it up.

Top with whatever sauces you like. I love a big smattering of ketchup or brown sauce! OR you could go for a Green Coriander Chutney or any red chilli sauce if you really want a Hot one!

It goes great with with my “Spiced Up” re-fried baked beans too.
