Simple “Green” Fish Marinade
Ingredients
- 4-6 white fish fillets (I usually go for Tilapia Fillets, but you could use sea bass, or even cod)
- 3-4 cloves of garlic & small knob of ginger (peeled)
- 3-4 large handfuls of fresh coriander (and more to garnish once cooked)
- 2 x Lemons
- 1-2 Green Chillies (more if you want it really spicy!)
Spices
- ½ – 1 teaspoon of Maniben’s Family Garam Masala
- 2-3 teaspoons of fresh ground coriander/cumin powder
- ½ teaspoon of Turmeric powder
- 1-2 teaspoons of salt
- 1 teaspoon of fresh ground pepper
Instructions
- Firstly sprinkle a little salt on both sides of each fish fillet and then squeeze the juice of a whole lemon over all the fish fillets. Cover and put in the fridge for at least an hour or two. (If in a rush you could leave out this part but it does make a difference in my opinion)
- While the fish fillets are in the fridge whizz up most of the fresh coriander (save some for garnish), garlic, chillies and juice from a fresh lemon.
- Then add the remaining spices to your green paste; Maniben’s Family Garam Masala, Turmeric, coriander/cumin powder, salt and ground pepper. Mix this all up, and you should now have quite a thick dark greenish paste. It shouldn’t be too watery, if it is, you may have added too much lemon juice or oil. Not to worry if you have, just add some more whizzed up fresh coriander.
- Evenly spread the green marinade over the all the fish fillets ensuring you cover both sides. You will need to do this with your hands so be prepared to get them fishy! It’s the only way.
- Place all the marinated fish fillets on a large flat plate and cover with cling film and marinate for at least 3-4 hours, if possible prior to cooking.
- When ready to cook transfer to baking tray and cook for in a preheated oven for approx. 15 mins at 200 degrees (Gas mark 5-6), this is obviously dependent on the fish you have chosen to use and the size/thickness of the fillets.
You can also grill them too on a medium grill setting for about 15mins turning halfway through, or in the summer they are great on the BBQ too.
I usually serve with a good handful of freshly chopped coriander and a good squeeze of lemon juice all over the fish fillets. This dish is great accompanied by any fresh salad or one of my favourites is a fresh tomato and red onion salad.
