Shredded Paneer Spinach Stir Fry
This Shredded paneer and spinach noodle stir fry is really, quick, easy and tasty. A kinda fusion recipe if you like and a great alternative way to use paneer, its also healthy with loads of spinach. A firm fave with the veggies too.
Ingredients
- ½ a block of 250g Paneer Grated / Shredded
- ½ onion diced
- 2-3 Large handfuls of Spinach Shredded (or as much as you like as it reduces down when you cook it)
- Chilli/Ginger/garlic finely chopped (use 1 small green Chilli)
- Few splashes of Light & Dark soya sauce
- Couple of glugs of oil of your choice
- Noodles of your choice (or rice if you prefer)
Spices – good sprinkling of the following
- 1/2 tsp turmeric
- 1 tsp’s of Ground coriander and Cumin
- 1/2 tsp of Maniben’s Family Garam Masala
- Handful of roughly chopped coriander for garnish & sprinkling of sesame seeds
Other Stuff
- Wok or large frying pan & Spatula
Instructions
- Get shredding and chopping
- Grate or cube your Paneer
- Finely Shred your spinach
- Dice your onion
- Finely chop your garlic, ginger, chilli
- Chop up your coriander for garnish
- Heat oil in a wok or large frying pan
- Add the onions and soften quickly for a min
- Throw in the Chilli/Ginger/Garlic mix into the hot oil for a few seconds
- In goes the Shredded Paneer keep stirring and mixing for a few mins and add a few splashes of light soya sauce.
- After about 8-10mins max in goes the shredded spinach and all the spices keep mixing in the wok until spinach is wilted and mixed with all the paneer, about 2-3 mins
- Add in your cooked Noodles for 2-3 mins with a splash of Dark soya sauce.
- Serve immediately with a garnish of chopped coriander and sesame seeds
