Mini Keema Shepherds Pies
This is from my online Winter Series – Episode 2 Spiced Up (Proper) Comfort Food
Another great combo twist of two faves into one!
This is PROPER comfort food!! Really easy, simple & really tasty too
Get Spiced Up and give it a go!
Make approx. 8 – 10 or 16-18 Mini Pies depending on the size of your Muffin tray
Ingredients
- 500g Lamb Mince
- 1 Medium Onion – Diced
- 1 Medium Carrot – peeled and diced
- Cup of Frozen Peas or Petit Pois
- 1 medium Tomato Whizzed (or I used 2-3 Tblspns of Mutti Polpa)
- 1 Tblspn of Tomato Puree
- 6-8 Cloves Garlic, Knob of Ginger, 4-6 Green chillis – Whizzed into a paste
- Couple of handfuls of fresh chopped coriander
- 4-6 Med Spuds peeled and diced to make into mash
- 2 knobs of Butter for your mash
- Splash of Milk also for your mash
- 2 x Rolls of Jus-Rol Shortcrust Pastry
A Good Sprinkling of all of the following Spices
- Salt & Pepper to taste
- 1 tsp Garam Masala
- 2 Tsps Ground Coriander & Cumin
- 1 tsp Tumeric
- 1 Tsps Red Chilli Powder
- 1 Tsp of Grd Cumin (to go into your mash topping)
- Bay leaf, 3-4 Cloves & Cardamon
How to…Make your Keema Filling
- Heat your Ghee in a large pan with your Bay leaf, Cloves and Cardamon
- Add your diced onion and cook for approx. 5 mins
- Next your Chilli, Garlic, Ginger paste – cook for another 5 mins approx
- Mix in your Lamb Mince and once browned (approx. 5 mins) add in all your spices and Tomatoes and diced carrot.
- Close the lid and cook for 8-10 mins
- Add your frozen peas & a good handful of freshly chopped coriander. Your Keema mixture is done. Leave to cool and stand
At approx. the same time (if you can multi task) get your dices spuds boiling so once your Keema filling is done you can make your mash topping
To make them smooth and tasty I added couple of knobs of butter, splash of milk, salt & pepper and a teaspoon of ground cumin and then mashed them up!
Roll out you Shortcrust Pastry and cut into the right sized circles that will fill the base of each oiled section in your muffin tray (I think that’s what these are called?). Don’t forget to lightly oil it so the pastry doesn’t stick to it.
Add in your Keema filling and top with your Mash (if you like you can also top your mash with some grated cheese?)
Into the Oven for approx. 25mins at 180-200 Degrees
Once out let them cook and carefully manoeuvre out of each one from your tray.
