Homestyle Family Masala Egg Curry
My Gran (Ba’s) homestyle family Masala Egg Curry recipe from when I was a kid.
A simple quick, fresh & healthy protein packed Egg curry that I was brought up on!
Ingredients
- 6 Eggs – Hard Boiled
- 3-4 Large Vine Tomatoes whizzed into a paste
- 1 large Onion – Diced
- 4-5 Cloves of Garlic and Large Knob of Ginger – Whizzed into a paste
- 2-3 Green Chillis finely chopped (you can add more if you want it more spicy!)
- Large handful of roughly chopped fresh coriander
- 2-3 Tbps Cooking Oil
- Large knob of Ghee
Spices
- 1 tsp Cumin Seeds
- Salt to taste (1-2 tsps)
- 1-2 tsp turmeric
- 2 tsps of Ground coriander and Cumin
- 1-2 tsps of Kashmiri red chilli powder
- 1 tsp of Garam Masala (at the end of cooking)
- 1-2 tsps of Kastoori Methi (at the end of cooking)
Instructions
- Boil your eggs in salted water – so they are hard boiled
- Heat oil in your saucepan and add your cumin seeds.
- Once the oil is hot add your diced onions for a 3-4 mins until translucent (don’t burn them!)
- Add your Garlic/Ginger paste and cook for a further 2-3 mins and add your finely chopped Green Chillis for another 1-2mins
- Add in your Whizzed up tomatoes. (You can add water at this stage , dependent on how saucey you want your masala base) thenadd in the following spices: 2 tsp Salt, 1 tsp Tumeric, ½ Tsp Red chilli powder, 2-3 tsps of Grd Coriander/Cumin powder
- Cook on medium heat for 10-15 mins. Keep stirring
- Peel your hard boiled eggs and make a slice/incision into each egg, don’t go all the way through though. This is to allow the Ghee/Tumeri/Chilli and your base masala sauce to seep & infuse into your eggs.
- Heat a good knob of ghee in a frying pan with a ½ tsp of turmeric and red chilli powder. Add in your boiled eggs and cook for 1-2 mins so all covered with the ghee, turmeric and chill powder.
- Transfer your eggs into your Masala sauce you’ve made and cook through for 1-2 mins, adding your Garam masala, Kastoori methi, give it a good mix and finish off with fresh chopped coriander
Serve hot with rice or hot buttered chapatti’s, Rotis or Naan – your choice
