Crispy Corn Masala Fry
A quick & easy, super tasty way to use up a tin of corn that’s been in your cupboard for a while
Check the date first tho!
A mix of Indian spices and also a dash or two of soy sauce with a some onions and peppers transforms this boring little tin of corn into a crispy spiced up fun in your mouth!
Ingredients
- Tin of sweetcorn
- 3-4 Tblsps of Cornflour
- 3-4 Tblsps of Rice Flour
- ½ red pepper (diced)
- ½ green pepper (diced)
- Small onion (diced)
- 3-4 cloves of Garlic (diced)
- Knob of ginger (diced)
- 1 Red Chill (diced)
- Salt & Pepper
- 1 Tsp Garam masala
- 1 Tsp Grd Coriander & Cumin
- ½ Tsp Chilli Powder
- 1 Tsp Tumeric
- 2-3 Dashes of light soy sauce
- Enough Oil to Deep fry your Coated corn
How to…
- Empty your tin of corn and drain (if its tinned in water)
- Mix the Cornflour and Rice Flour with the Corn in a large bowl with a good sprinkle of Salt & pepper
- Heat your oil in a deep pan to approx. 170-180 degrees and deep fry your flour coated corn for 1-2 mins.
- Drain your corn and set aside
- Heat your wok on a medium to high heat (or large frying pan) with a tablespoon of oil until hot
- Add your diced garlic, ginger and red chilli, cook for 30 secs, then add your diced onion for another min, mixing all the time.
- Add in your Red & Green diced peppers and stir fry for another min or two.
- Add all your spices and a good pinch of salt and few dashes of light soy sauce and another good mix.
- Add your sliced spring onions and garnish with fresh chopped coriander and serve
