Courgette Curry
Taking a humble courgette and turn it into something bold, spicy, and proper delicious!
I’m not veggie or vegan—but trust me, this curry packs just as much flavour as any meat or chicken dish I cook!
My wifes a Veggie and she loves this one!

What I used…
- Courgette
- Small Onion diced
- 1 Tbspn of Oil
- 2 cloves of garlic, small knob of Ginger, 1 small green chill – All finely chopped
- Handful of fresh coriander – chopped
Spices
- Salt
- 1Tspn of Carom Seeds (Ajwain)
- ½ tsp of Hing (Asafoetida)
- 1 Tsp Ground Coriander & Cumin
- ½ tsp of Tumeric Powder
- ½ tsp of Kashmiri Chilli Powder (Optional)
- ¼ tsp of Garam Masala
How…
- Chop, prep you Courgette slice in to ½ cm round slices and then Qtr these
- Heat your oil in a large flat with your Carom seeds and Hing for a min
- Add in your diced onion and cook until softened for 1-2 mins
- Add in your Garlic/Ginger/Chilli paste cook for another min
- Add your chopped/sliced courgette – give it a good mix
- In go your all your spices (except your Garam Masala) and mix through and cook on low’ish heat for 10-15mins, stirring occasionally
- Sprinkle in your Garam masala and give it a one last mix through
- Garnish with your chopped coriander, squeeze of lemon and serve with hot chapattis or naan
