Chicken Shawarma Tower Recipe

Simple Chicken Shawarma Tower Recipe


  • Approx 1.5-2 Kg of Chicken thigh fillets
  • 1 large Onion

For the Marinade

Dry Spices

  • 1-2 tsp of Salt
  • 1 Tsp of black pepper
  • 1Tsps of Ground Cumin
  • 1 Tsps of Ground Cinnamon
  • ½ Tsps of Ground Cloves (if you have them/optional)
  • 1 Tsp of Maniben’s Family Garam Masala
  • 1-2 Tsps of Ground Coriander
  • 1 Tsps Smoked Paprika

All the wet stuff

  • Juice of 1 lemon
  • 1 Tblsp of Oil (Veg or Olive)
  • 3-4 Tblsps of Yoghurt
  • Chilli/Ginger/garlic paste (Whizz all of the below into a paste)
    • 2-3 fresh green chillies
    • 6-8 Cloves of Garlic
    • 1 Large thumb of ginger


3 wooden Skewers

Large Mixing bowl


  1. Flatten the chicken thigh fillets with a Meat tenderiser mallet or rolling pin
  2. Marinate our flattened chicken thigh fillets with all of the marinade ingredients and mix well and refrigerate for as long as you can (min 1 hour)
  3. Now the fun part, making your Shawarma Kebab tower!
    1. Cut your large onion in half and put the 3 skewers through the onion in a triangle shape. This will form your base for the tower. Place this in a oven proof baking tray
  1. Start layering up your chicken through the skewers and pressing down as you go. When nearly at the top put the other half of the onion onto the top through the skewers and press down to secure all your marinated chicken in place.
  2. Place in a pre-heated oven for 45-60 mins at 190 degrees Celsius turning regularly
  1. Take out the oven once cooked through and start carving just like in your local kebab shop!
  2. Make into wraps with fresh salad of your choice. We usually have it with a Coriander, garlic Yoghurt sauce and chilli sauce of your choice.
