Chicken Curry Pot Pie Recipe
Can’t beat a Chicken Curry Pie can you?
Give it a go and get Spiced Up!
This is so much fun to make and so so tasty too!
You can even make the filling in batches & freeze it too!
The below makes enough for approx. 12 small pot pies!!
Ingredients
- 600g of Chicken Thigh fillets (marinated in half the spices below)
- Puff Pastry 3 sheets
- 1 x Beaten Egg for coating the pastry
- 1 x Diced onion
- 1 spud – peeled & cubed
- Frozen mixed veg – of your choice
- ½ cup Plain Flour
- 500 – 600ml of Chicken stock
- Green Chilli (2-3), Garlic (4-5), Ginger (small thumb sized knob) – whizzed into a paste
Spices
- 2 Tsps Turmeric
- 2 Tsps Ground coriander and Cumin
- 2 Tsp Maniben’s Family Garam Masala
- 1 Tsp Red Chilli powder
- 2-3 Tsps Salt & Pepper
Other Stuff
- Large Deep Sided pan
- Deep Muffin non stick pan
Instructions
- Marinate your chicken thighs in half the spices and a splash of oil
- Heat a saucepan with a glug of oil and cook your marinated chicken thighs for 10 -15mins, then set aside and when cooled shred.
- In the same pan heat some more oil (or butter or ghee) and throw in some jeera seeds, then add your diced onions fry until softened (approx. 4-5mins).
- Add Garlic & Ginger, Green Chilli paste to your onions and cook for another 2-3 mins
- Add your cubed spuds, mix and cook for 5 mins
- Add you half cup of flour and mix thoroughly, add your chicken stock and keep stirring so no lumps form.
- Add the rest of your Spices & simmer and keep stirring for approx. 10 mins until thickened. Add a big dollop of Yoghurt and give another good stir.
- Add your frozen veg and your shredded chicken?
- Cut your Puff Pastry to size, coat inside with egg and fill with your chicken curry mixture
- cut circles for the lid of your pot pie and cover and fold over the pastry.
- Brush with egg and a sprinkle of cumin seeds.
- Your pies may look bit of a mess. Don’t worry!! They will transform while cooking in the oven!
- Into the oven 30mins @190 degrees – Pull out your transformed Chicken Curry Pot Pies Pies
Eat just like that or serve with Cumin Mash and a spiced up gravy!
