Bombay Masala Cheese Sandwich

This is from my online Winter Series – Episode 3 Spiced Up (Proper) Comfort Food

A classic Bombay (Mumbai) Street Food. Its really the best ever buttery, spicy cheese toastie!

Note sure how something so simple can be so good? But it is!!

Get Spiced Up and give it a go!

Ingredients

  • Two large handfuls of Grated Cheese of your choice (Cheddar and Red Leicester work well)
  • 1 small red Onion – Diced
  • 1 Tomato (half diced and half sliced)
  • 1-2 Green chillis finely chopped
  • Couple of handfuls of fresh chopped coriander chopped
  • Soft Butter to spread on both sides of all your bread
  • 2-3 Slices of Bread (depends if you want to make a triple decker)
  • Chaat Masala or Garam Masala
  • Green Coriander Masala Chutney

How to…

  1. Add your Grated cheese, diced Onion, half a diced Tomato, chopped green Chilli and most of your fresh coriander with a good generous sprinkling of Chaat masala (or can use Garam masala approx. 1-2Tsps) into a large bowl and mix it all up
  2. Butter Your bread on Both sides
  3. Spread one side of each slice of bread with your Coriander Masala and a good squirt of Mayo (optional)
  4. Layer on your Cheesey mix on top of your bread that’s been covered with your Coriander Masala & mayo with a layer of thinly sliced tomatoes and then slap the other slice of bread on top.
  5. Slap onto a hot Griddle pan (always butter side down!) – add more butter to the pan if you like. Flip over once one side is toasted and crispy and griddle the other side.
  6. If making a Triple Decker (Otherwise skip this step) – add a layer of Coriander masala and the rest of your Cheesy mix and your last slice of buttered bread – Pressing down firmly with a large spatula and flip over once the bottom sides if toasted for griddle / toast your last butter side
  7. Serve with a good sprinkle of Coriander and Tamarind sauce and Chille Sauce
